These apple cinnamon waffles are made with unsweetened applesauce and whole wheat flour which makes them super healthy. Each waffle packs 7g fiber, 6g protein, and only 3g of natural sugar. They have fresh apple chunks inside and plenty of fall spices that add so much flavor. Top them with coconut whipped cream, fresh apple slices, and maple syrup!
In a medium bowl, combine flour, flaxseed, coconut sugar, baking powder, apple pie spice, cinnamon, and salt. Stir, then set aside.

Wash a large apple and chop it into small, fine chunks about the size of a dime. If they are too thick and chunky, it may be harder to bake.

In a large bowl, whisk together the egg, applesauce, and vanilla extract. Then add in the almond milk and stir.

Add the dry ingredients to the wet ingredients. Stir until about half of the flour is incorporated. Then, fold in the chopped apple. Stir to combine the remaining flour. Be careful not to overmix.
Heat your waffle iron and spray with a non-stick cooking spray. Add ¼ to ½ cup of batter (depending on your equipment) and cook for 3 minutes or until there is no more steam coming from the waffle iron.
Remove the waffles from the waffle iron and repeat the process until all batter has been used. Top waffles with coconut whipped cream, apple slices, cinnamon, and pure maple syrup.
Notes
This recipe can easily be made vegan by using a flax egg in place of the real egg. Combine 1 tablespoon ground flax seed with 3 tablespoons water. Let stand for 10 minutes to thicken.
