This mixed berry chia seed jam only takes 15 minutes to make! A combination of strawberries, blackberries, blueberries, and raspberries come together with chia seeds to make a thick and delicious jam. Much healthier than store bought jam!
2cupsmixed berries(I use a frozen mixed berry medley, but fresh works too!)
2tablespoonlemon juice(fresh or bottled works)
½tablespoonhoney
½tablespoonpure maple syup
½teaspoonground cinnamon
3tablespoonchia seeds
⅛teaspoonsalt
Instructions
In a medium saucepan, heat 2 cups mixed berries on medium heat until soft. Mash with a fork to break up the berries.
Add the lemon juice, honey, maple syrup, and cinnamon to the berries. Stir.
Add the chia seeds and salt. Stir. Reduce to low heat and simmer for about 10 minutes, stirring occasionally. The mixture will thicken over time.
Remove from heat once thickened to desired consisency. Let cool. The jam will continue to thicken slightly.
Transfer to a jar or sealed container once cooled. Use immediately, or store in the fridge.
Notes
Any type of berry will work well in this recipe. If you want strawberry jam, for example, use only strawberries.If you want a sweeter jam, use 1 tablespoon honey and 1 tablespoon maple syrup.If you want no added sugar, omit the honey and maple syrup in the recipe. The jam will still taste great, just not as sweet.The pinch of salt helps balance the flavors and bring out the taste more.This recipe makes about 1 to 1 ¼ cup jam.
