These chocolate protein pancakes are vegan and made without banana! They are super easy to make with oat flour, plant-based protein powder, and cacao powder. They're super fluffy and make for a great protein-packed breakfast!

Instructions
Start by making oat flour. Add quick oats or old-fashioned oats to a blender or food processor. Blend until you have a fine flour. Then measure out the proper amount of oat flour for the pancakes.

In a small bowl, stir together 1 tablespoon of ground flax seed with 3 tablespoons water. Stir, then let stand for 10 minutes to thicken. This is the flax egg.

In a large bowl, stir together the oat flour, protein powder, baking powder, cacao powder, coconut sugar, cinnamon and pinch of salt.

Add the almond milk, flax egg, and vanilla extract to the bowl and stir until just combined.
Lightly coat an electric skillet or frying pan with non-stick cooking spray. Heat over medium heat.
Add about ¼ cup pancake batter to the skillet and cook until the edges start to firm and bubbles appear on top. Flip the pancakes and cook until fluffy. It does not take as long to cook after you flip.
Top the chocolate pancakes with fresh berries, nuts, peanut butter, or pure maple syrup. Enjoy!
