Brew espresso and stir in coconut sugar (or preferred sweetener) while still hot. Place the espresso in the fridge to cool for 10-15 minutes. This prevents it from melting the ice immediately.
¾ cup espresso, 2 teaspoons coconut sugar, 1 tablespoon maple syrup, 1 teaspoon pure vanilla extract, 1 teaspoon pure maple extract
Fill a 20-ounce glass with ice cubes. Pour the chilled espresso over the ice. Then add the unsweetened almond milk. Stir to combine.
