I am not kidding when I say these pink sugar cookies are easy to make. Seriously, they are done in just 20 minutes! Here are instructions for making the cookies:
STEP 1: Beat butter, oil, and sugar. In a large mixing bowl, use an electric hand mixer (or stand mixer) to beat the vegan butter, coconut oil, and cane sugar until light and fluffy. This takes about 2-3 minutes.
STEP 2: Add egg and vanilla. Then, add the egg and vanilla extract and beat on medium-high speed until thoroughly incorporated.
STEP 3: Add dry ingredients. Add the gluten-free flour, baking powder, baking soda, and salt to the same bowl. Mix on low speed until just combined. Don't overmix!

Hi Sarah! Great question. I have used King Arthur Gluten-Free Measure for Measure flour and I've also used "Divided Sunset" Gluten Free All Purpose-Flour (found at walmart). Always check to make sure there is xanthan gum in the ingredients list and the cookies should be fine! Just don't use almond flour or coconut flour, make sure it's a gluten-free 1:1 all-purpose flour. Let me know if you have other questions!
